The Pass is a unique dining location. An intimate restaurant found in the heart of the kitchen, diners are immersed in the experience, able to watch all the action, see dishes created and enjoy all the flavours just by taking a seat.
Specialising in hosting residencies and creating partnerships with chefs who will bring their own style to The Pass for a limited time only. An exciting and interesting time for diners who will be able to experience the talent of different chefs and their menus throughout the year.
etch. by Steven Edwards comes to The Pass
We are excited to welcome MasterChef: The Professionals 2013 winner Steven Edwards and his team from etch. for an eight week summer residency.
Steven Edwards at The Pass will have the same tasting menu ethos as etch. with frequently changing dishes that celebrate the very best of Sussex produce and seasonal ingredients.
This guest appearance sees a return for Steven who first worked at The Pass in 2008 when the restaurant first opened with Michelin-starred chef Matt Gillan at the helm. Steven moved on from South Lodge six years later, after his MasterChef success to begin his own venture.

All bookings require a non-refundable deposit of £20. Our reservations team will be in contact after booking to take payment.
The Pass is an adult only environment.
Steven Edwards offers meat and fish, or vegetarian menus. With advanced notice we can accommodate menus with low dairy or egg free. Unfortunately we do not offer vegan or menus for a more restricted diet.
