To quote British Chef, restaurateur and TV Chef, Gordon Ramsay, "If you want to become a great chef, you have to work with great chefs". With this in mind we have gathered together a carefully selected brigade of our talented Chefs from around Exclusive Collection as well as gifted and brilliant local chefs, producers and experts. All of whom are passionate about sharing their knowledge and skills with like minded people.

Andy Mackenzie, Executive Chef for Exclusive Collections Chefs' Academy

Andy has earned the titles of Local food champion & A Hampshire Life Food Hero. He has been a chef with Exclusive Collection for over 30 years and currently runs the Exclusive Chef's Academy, a career development programme created to increase opportunities for chefs within the Exclusive Collection.

Sylvain Gachot, Cookery School Manager at SEASON 

Sylvain joined the brigade of chefs at Lainston as demi-chef de partie and worked hard over four years to become sous-chef and then after a further two years gaining valuable experience, he became Cookery School Manager in 2015.

Lewis Hamblet, Executive Chef of Camellia at South Lodge

Starting with a catering course in his hometown of Bolton, Lancashire, he gained valuable experience at London’s renowned Savoy Hotel as well as Amberley Castle.

Jamie joined Royal Berkshire in 2013 but has worked for Exclusive Collection for over 10 years including time at Pennyhill Park and Fanhams Hall before becoming Executive Chef at Royal Berkshire.

Phil brings over 20 years of experience from kitchens including; the Dorchester, Harvey Nichols, Soho House, Fearrington Inn in North Carolina and Head Chef of the Coral Beach Club in Bermuda.

Sarah Frankland, Head Pastry Chef at Pennyhill Park

Winning numerous awards during her career, including the Academy of Culinary Arts Awards of Excellence in Pastry in 2008, in 2012, an Acorn award by The Caterer magazine recognising 30 chefs under 30 for their work in the hospitality industry, came second in the UK selection for World Chocolate Master in 2017 and most recently becoming a finalist in 2019 Bake Off: The Professionals.

Mitch Lee, founder of Mitch's Kitchen

Having worked as a vegan chef, culinary teacher and restaurant manager, Mitch is the founder of UK-wide plant-based food brand “Mitch’s Kitchen”. His knowledge around vegan and gluten-free principles has earned him endorsements from Vegan Living Magazine along with a roster of high profile celebrity clients whom Mitch has taught privately.
